Its the Monday grind again and back to striving to eat clean. We sure do wreck it on the weekends! My two wonderful middle schoolers came home today with invitations to the National Honors Society so they are gonna wreck my healthy dinner I’ve planned tonight with an ice-cream outing for their success!
S A B O T A GE ! ! But I am so proud and happy to treat them.
For dinner we are having grilled chicken, sweet potatoes, sauteed spinach, and salad. My mister is big on salads lately so I came up with this Citrus Vinaigrette to mimic Greens and Grille, his favorite.
This is my concoction for a citrus vinaigrette:
2 oranges, 2 lemons, juiced <also use zest of one orange>
2 teaspoons of honey
1 tablespoon of dijon mustard
1 teaspoon of ground ginger
3/4 cup of white wine vinegar
1/4 cup of olive oil, or sesame seed oil
salt and pepper
bring to a boil and simmer til it thickens/ let it cool and voila!
magazine is a fav of mine and this article will fill you in on the benefits of superfoods like sweet potatoes. This is one way my kids will eat sweet potatoes.
Slice them up and bake like chips. I prefer to spray with olive oil and sea salt and bake at 400. Did you know that if you eat sweet potatoes it turns up the fat burning in your body and also releases a hormone that tells your brain when to quit eating? I need that hormone to work!
