im sorry for the lack of blog action ’round here. the cory household has been more demanding than the norm as of late.
im entertaining my parents this weekend. im only blogging because everyone is in the same room watching a movie that doesn’t have my attention. a freebie for me.
i wanted to brag about a dish I made last night and share the love.
we usually avoid pasta because our waist can only take all the cookies i bake around here. i mean we’d be real fatties if we did both! but… facing the demands of a busy schedule, its quick so let’s pull out the multi-grain pasta and keep walking.
im not a chef, but i am a fancy cook!
i zest a lot of lemons around here and I mince a ton of garlic.
here’s to a healthy yummy lemon arugula pasta!
chicken or shrimp or both or neither:) (a rotisserie chicken chopped up is wonderful in a hurry)
extra virgin olive oil
a box of pasta. i like thin spaghetti.
3 cloves of garlic (minced or chopped fine)
arugula (2 bunches or handfuls)
one bunch of broccoli (remove stems)
one package of cherry tomatoes (halved)
2 cups of heavy cream
2 cups of shaved parmesan cheese
boil broccoli for 3 minutes and remove from water or you’ll have it mushy
heat up the oil
sauté the garlic til light brown
add juice of 3 lemons and zest
add cream ( med-high heat)
add tomatoes and broccoli
when that has thickened up add in the cooked pasta and stir.
last throw in the arugula
voila!! u fancy cook!!
ps. i invested in an oversized sauté pan. its pretty heavy duty and nice when serving a lot of people
